Collard Greens Zucchini Boats
We had some leftover black eyed peas and collards from New Years Day, and we needed to do something with them before they were dead. The collards were garlickly good- a 101 Cookbook recipe– so I didn’t add garlic but you can. With a few zucchinis waiting for us, zucchini boats it is! Aside from the cheese topping, there are a lot of options for stuffing ingredients, all kinds of combinations are possible. Here is the one we made.
