Green Spaghetti Monster

GreenPasta04A bit odd, but mostly I think because the taste of pureed spinach masquerading as pasta sauce is incredibly unfamiliar..


  • 1/2 box of spaghetti, cooked
  • 4 tablespoons reserved pasta water
  • 8 oz frozen spinach
  • 2 large spoonfulls of cottage cheese
  • a handful of almonds, chopped
  • 1 large garlic clove

Puree/blend up the spinach, cottage cheese, almonds, garlic, and half of the pasta water in your roommates badass Vitamix blender. Add to the pasta and warm up on the stove (maybe in the pan you just cooked the bacon up in). Add the rest of the pasta water. Mix. Top with good things like bacon and blue cheese..

So we really used three garlic cloves instead of one- which I don’t recommend- because my breath is killer..
