Spinach Potato Casserole
This casserole is one of my favorites, and I usually make it with ground beef or the occasional Italian sausage, but today we made it with leftover stuffing stew (last post). It made it a little soupier than normal- but bursting with flavor. You don’t want it to come out too runny, so more dumplings, less stew works out the best. Just something to consider.
