Carrot Pasta

carrotpasta7Too many carrots (and time).. Also I live with someone with a pasta maker. Pretty good cooked up with some butter. Or carbonara.

  • 6 medium carrots, peeled, cut into 1-inch pieces
  • 2 large eggs
  • 1 large egg yolk
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • coarse salt
